Sunday Dinner: Infallible Rice Casserole

We are all survived by things we have done. Mr. Bell gave us the telephone, someone I don’t know gave us the paper clip, and we have the late Wilma Brown of Gaffney to thank for Infallible Rice Casserole.

This simple recipe has a lot in its favor. It has only four ingredients, and you probably have these in your pantry and refrigerator. It is easy to assemble, and it can bake while you are doing something else. It is a dish that will go well with almost any menu and is good for family or guests.

Mrs. Brown and her late husband, Clyde, were members of Goucher (pronounced Go-cher) Baptist Church of Gaffney, originally Goucher Creek Baptist because it was located near Goucher Creek. The creek is still flowing, but the church dropped that part of its name many years ago.

Goucher Baptist Church, one of the state’s oldest churches, has been in the church business since 1770 and is currently served by Rev. Norman Gardner, pastor, and Rev. James Sean McElworth, the new student minister. The church offers the programs of most Baptist churches.

The late Mrs. Brown, who died more than a year ago in her mid-90s, and her husband were members of Goucher for decades, serving in many capacities.

Professionally, she was a school teacher in several local schools and on different levels, but liked 7th and 8th grades the best.

She loved her church and taught both adult and youth classes, but preferred the junior and senior high age groups. In her retirement, she liked knitting, and it was her pleasure to knit items and give them to others. She was also known as a good cook, but we don’t know where she got this recipe. The Browns had one son, Barry. He and his family live in the area.

Mr. Brown worked in the textile industry and loved children, often spending the Sunday school hours in the children’s department. A testimony to their lives was given by Mrs. Dell Byers, church secretary, who said, with affection and respect, “They were well thought of.”

And we thought well of Wilma’s casserole. You will also. It is a good recipe to accompany beef, pork or chicken. It is good for a family, and good and pretty enough for company. It is easily put together, so you can make it when you get home from church, or you can make it in the morning and reheat it briefly. Infallible Rice Casserole

1 medium onion, minced
2 tablespoons butter
1 cup regular white rice
2 cups chicken broth (hot)

 

Sauté onions in the butter over medium heat until clear. Combine onions, rice and hot broth. Bring to a boil on top of stove.

Put into a casserole baking dish and cover. Bake in a 325-degree oven for 20 minutes.

Serve hot and listen for the compliments! Serves 4 hungry or 6 polite people.
