A couple of weeks ago, I had my annual cold, which involved losing my voice for three or four days. No one seemed to care. For about a week, my chest ached, I sneezed and coughed and spit, and then it was over. I stepped on the scales and saw that I had lost about five pounds. It was the best cold I ever had.
A few days later, I made today’s recipe, which is one of many variations of this dish. I think you will like it. It comes from “Heavenly Delights,” the collection of recipes from Pleasant Grove Baptist Church in Greer, where Danny Emory is pastor. Pleasant Grove is a member of the Greer Association.
This recipe was submitted by Tammy Black. When the request went out for recipes, Tammy says she looked through hers and selected a few. She doesn’t remember where she got this one, but has had it a long time and uses it often.
Tammy and her husband Dewayne, formerly with General Electric in Greenville, have one child, Ashley. She and her husband, Justin Ingram, and their daughter Dawn live in Simpsonville. Tammy has been an insurance agent with Lanford and Gibson Insurance in Greer about one and a half years. In her free time, Tammy reads and enjoys their granddaughter, and she and Dewayne walk their dogs.
The Blacks were members of Pleasant Grove for about eight years, but now attend His Vineyard Church, where Keith Kelly is pastor. Tammy and Dewayne are part of one of the “growth groups” that meet weekly in homes for Bible study and fellowship.
This is a good family recipe, easily put together. It has only six ingredients. Tammy says that you can use grated cheddar cheese and adjust the seasonings if you wish. I think it’s one you’ll want to use for your family. You can assemble it in the morning, cover it with plastic wrap, put it in the fridge, then bake it when you get home from work during the week or after church for …Sunday Dinner.
Cheeseburger Pie
1 pound ground beef
¼ cup onion
1 6-ounce can tomato paste
½ teaspoon (or more) Italian seasoning
1 8-count package crescent rolls
6 slices American cheese
Preheat oven to 350 degrees. Brown and drain the ground beef. In a bowl, mix the cooked beef, onion, tomato paste, and Italian seasoning.
Separate the rolls and press the pieces into an 8-inch round pan. Pour the meat mixture in the pan and spread evenly over the rolls. Top with the sliced cheese.
Bake for 25 minutes, or until the crust is brown and the cheese is melted.
Serves 6.
