“They may be better made with butter,” Helen Martin said. We were discussing her recipe for Easy Yeast Rolls, which required margarine. I had made them with butter.
We talked about refrigerator rolls in the last issue of the Courier and here is another recipe, slightly different and good. I’m trying to get you to bake at home with ingredients that you can pronounce. Look at all the stuff on the list of ingredients in things you buy. Exchange those for flour, sugar, butter, etc.
Helen has been making these rolls for a while. She has lived in Beaufort most of her life, having been a member of The Baptist Church of Beaufort since 1945, and has seen a lot of changes in those 64 years.
The Baptist Church of Beaufort has a new pastor, Jim Wooten, who came Dec. 1. The church, which has around 500 in its two Sunday morning worship services and Sunday school, is in a growing mode. There is no evening service.
During her years at The Baptist Church of Beaufort, Helen has held several offices. She was treasurer of her Sunday school class for a while and since 1990 has been on the Sunshine Committee, which sends cards, flowers, etc., to members. For several years, she was on the Homebound Committee, visiting members who could not attend worship services. She also meets monthly with the church’s craft group. Each year they make items that are given to the homebound members at Christmas time. I can’t tell you what they are working on this year; it’s a secret!
She goes to the monthly first Thursday meetings of OASIS (Older Adults Still in Service) when the 50 or more (“a bunch,” she says) adults gather for a covered dish meal and a program.
Helen’s late husband Charlie died 16 years ago, and she lives alone. She and Charlie have three sons: Chuck and his wife Donna, who live in North Carolina; Robert, who lives in Maryland; and Henry and his wife Sandi of Beaufort; nine grandchildren; and 10 great-grandchildren.

She doesn’t bake as much as she did formerly and doesn’t remember when she got this recipe, but it’s a good one. If these rolls are served at lunch or dinner, then she usually serves butter with them. If they are served at breakfast, she agrees that butter, jelly or jam would be great. She says the recipe could be used to make cinnamon rolls, etc.
Make these rolls and refrigerate them, then as soon as you get home from church on Sunday, roll and shape them. Let them rise, then bake while you are preparing the rest of the meal. Add butter, and you will all enjoy these for …. Sunday Dinner.
Easy Yeast Rolls
1 cup boiling water
¼ cup shortening
¼ cup butter or margarine
⅓ cup sugar
1¼-ounce package yeast
1 egg, well beaten
1 teaspoon salt
2 to 3 cups sifted all-purpose flour
In a large mixing bowl, pour the boiling water over the butter (or margarine) and shortening. When the shortening and butter have melted, add the sugar.
When the liquid has cooled to lukewarm, add the yeast and stir until dissolved. Add the egg and salt to the liquid.
Sift the flour into the liquid about 3/4 cup at a time. Add enough flour to make a soft dough. Let rise, or cover and put into refrigerator until ready to use.
When ready to use, take the amount you need, roll, cut into shapes, and let rise about 30 minutes. Preheat oven to 350 degrees and bake about 10-15 minutes.
Batter will keep a week or so in the refrigerator.
