“If you’re tired of the bird …,” Linda Knight says, referring to her recipe for Meatloaf with a Kick. Nothing is better than the traditional Christmas food, but this “comfort food” is enjoyed by almost everyone after we settle down from the holidays. We have had meatloaf recipes previously, but I think you’ll want to add this one to your keeping pile.
Linda is a member of High Point Baptist Church, Pageland. She moved her letter there from the Mt. Moriah church in North Carolina when she and her husband moved to Pageland about a year ago. After moving around with her husband’s work, she declares that “we are here to stay!”
Shortly after that, in February 2010, Robbie Nicholson, his wife Polly, and their children Matthew and Megan came as the new pastor and family from Taxahaw Baptist Church in Lancaster County.
High Point Baptist Church averages around 85 for its Sunday service, with 21 in the choir. They have Sunday morning, Sunday evening and Wednesday evening services, WMU, etc. High Point is in Chesterfield Baptist Association.
Linda and her husband Edward (Eddie) have three children – Jessie; James and his wife Tracy; and David and his wife Mable – and six grandchildren. Linda is a member of the choir and the ladies Sunday school class.
Eddie is a member of the Chesterfield Fliers, the hobby of remote control airplanes. He also likes Linda’s cooking, and she says he is her “guinea pig” as she tries new recipes. Linda has always liked cooking and remembers standing on a wooden box to reach the stove top to cook when she was a child.
In making this recipe, you may want to start with one dash of the hot pepper sauce to see if it has enough “kick,” and add more the next time if needed.

As are most meatloaves, this one keeps well in the refrigerator to be reheated for another meal or for sandwiches. Linda says she forms the meat into a football shape instead of making it flat. If serving from the baking pan, remove as much of the drippings as you can.

Meatloaf with a Kick
3 eggs, beaten
2 pounds ground beef (80 percent lean, not more than 20 percent fat)
1 large yellow onion, finely chopped
1 tablespoon tomato paste
Dash Worcestershire sauce
1 or 2 dashes hot sauce
Salt and pepper to taste
3 slices white or whole grain bread
1 pound ground pork
1 bell pepper, chopped
1 15-ounce can tomato sauce
¼ teaspoon garlic powder
½ cup grated Parmesan cheese
Ketchup
Preheat oven to 350 degrees. Spray bake-and-serve pan with cooking spray.
Beat eggs in a small bowl. Tear bread slices into small pieces and add to eggs. Stir and let sit for bread to soften.
In large bowl, combine remaining ingredients (except ketchup) and mix well. Add the softened bread and eggs, and mix well. Place into prepared pan. Cover with a thin layer of the ketchup.
Bake 1 to 1½ hours. If moving to another dish to serve, let meatloaf cool about 30-35 minutes. Serves 8-12.
