Sunday Dinner Make-Ahead S’mores

I don’t know if she is/was a Baptist. I don’t know of which church she was a member. I have searched (yes, diligently) but have been unsuccessful. I found her recipe in a 9-year-old magazine, and we thank her, wherever she is.

Her name is/was Anne and her address is/was Orangeburg and she told us how to make indoor “S’mores.”

This is a good recipe. Memorial Day brings us the official beginning of summer with its cook-outs, church picnics, family gatherings, etc. This will be a good dessert for you to take. The problem will be keeping them in the kitchen long enough to have some left for your event.

“S’mores” are an outdoor cooking staple for RAs, GAs, Camp Fire Girls, Girl and Boy Scouts, or any group that plans an outing involving an open fire.

The outdoor way is to give everyone two graham crackers, one marshmallow, one half of a Hershey chocolate bar, a stick and a space beside the fire. Put the marshmallow on the stick and hold it close to the glowing coals until the marshmallow roasts to a light brown. It is preferred that the marshmallow not turn into a black cinder and drop off the stick. Have extra marshmallows.

Place the half of the chocolate bar on one graham cracker, put the hot roasted marshmallow on that, then top with the remaining graham cracker and press down.

Eat.

For your next young people’s meeting, you may want to consider making the S’mores outside over coals. If you don’t want to do that, then try this indoor recipe. Make these Friday or Saturday and they will be just right for your snack in the afternoon after … Sunday Dinner.

Make-Ahead S’mores

8 ounces semi-sweet chocolate
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1 16-ounce box graham crackers
2 cups miniature marshmallows

In a heavy saucepan, melt chocolate over low heat. Stir in milk and vanilla. Cook and stir until smooth.

Making 1 S’more at a time, spread 1 tablespoon each of the chocolate mixture on 2 graham crackers.

Place 5-6 marshmallows on top of the chocolate of 1 cracker. Gently press the other cracker on top.

Repeat with remaining chocolate, crackers and marshmallows.

Wrap the S’mores individually or place on plate and cover with plastic wrap.

Store at room temperature. Yield: 16 S’mores.

(Note: Of course they have a lot of calories, so eat only one – not all 16 at once.)
