Mary Beth’s Kitchen: Pimento Cheese Spread

March was always a fun month at our house — we could finally be outside again! One of our favorite things to do for dinner was to go to Clemson, where there was a big hill suitable for flying kites. We would buy a kite for all of us and pack a picnic dinner. It was starting to stay daylight longer, so when Tom got home we loaded the kids, kites, food, and a blanket and spent the evening together. The hill had no trees around, and the wind was just right for flying kites.

There was so much laughing, and the food was also fun. We would do it several times that month, and when my grandchildren get a little older I will start that tradition with them, too.

This picnic needs to have something special for each one. Pick a fruit that everyone loves, a sandwich made with what they like, and a fun dessert. Take just water to drink, since it isn’t sticky and doesn’t attract bees. Take a picture on the hill with everyone holding their kites. And make an album for their memories!

Picnic Menu:

Miss O.’s Pimento Cheese Spread
Whole wheat crackers or bread
Carrot and celery sticks
Apples
Water with lemon slices

Pimento Cheese Spread

1 8-oz. package cream cheese, softened
1/3 cup plain, vanilla or Greek yogurt
1/8 teaspoon garlic powder (optional)
2 cups shredded sharp cheddar cheese
1 4-oz. jar diced pimentos, drained

Beat cream cheese, yogurt, and garlic powder until creamy. Add cheese and mix until slightly lumpy. Mix in pimentos. Chill.
