This recipe for Roast Beef with Gravy is my family’s favorite in the winter. We make sandwiches from the leftovers the next day. The leftovers can also be shredded and added to vegetable soup for a richer flavor. This recipe and the leftovers will help keep you warm in the chilly winter weather.

Roast Beef with Gravy
1 4-lb. bottom round roast
1 sweet onion, quartered
1 clove garlic, chopped
Garlic powder
Black pepper
Beef gravy*
Put roast in covered roasting pan and bake uncovered at 400 degrees for 20 minutes. Lightly sprinkle top of roast with garlic powder and pepper.
Add quartered onion and chopped garlic. Add 4 cups water, cover, reduce temperature to 350 degrees. Cook for 1 1/2 to 2 1/2 hours, or to desired doneness. Make gravy (*save your broth, heat, stir in plain flour until desired thickness); serve over brown rice.
